My journey into vegan, high-protein cooking wasn’t always straightforward. I grew up in a family where meat and dairy were staples, so when I transitioned to a vegan lifestyle in my mid-twenties, it took a lot of unlearning and relearning. But what started as a health decision soon became a deeper passion. I realized that with the right ingredients and a little imagination, I could create meals that not only met my family’s nutritional needs but also brought smiles and second helpings to the table.

Protein was my biggest challenge at first. Like many, I worried: Would my girls get enough? Could I stay energized chasing after toddlers without animal products? But through trial and (delicious) error, I discovered an entire world of plant-based proteins that now make up the backbone of our meals. Think lentil loafs that rival any meatloaf, chickpea scrambles that even my picky eater devours, and smoothies so packed with goodness they keep us all going through the busiest of days.

One of my proudest moments was watching my oldest daughter help me prepare black bean quinoa burgers for a family picnic. She measured, mashed, and even made her own mini version—with extra avocado, of course. That day, surrounded by friends and sunshine, I saw how food can teach not just health, but confidence and togetherness.
